I follow a ton of health and fitness accounts on Instagram and saw a post about Chia Seed Pudding. I recently purchased chia seeds for my açaí breakfast bowls so I looked up some recipes on Pinterest. There were a ton of options so I just took some ingredients from different recipes and made my own (per usual). This one is probably the most simple Chia Seed Pudding recipe out there and it took me 1 minute of prep and an hour of chilling the pudding in the fridge so the seeds would expand.
Chia Seed Pudding
- 1/4 cup of coconut milk (unsweetened)
- desired amount of chia seeds (I used organic black chia seeds)
- 1 banana
Mix banana and coconut milk in a blender until it’s completely blended in a thick consistency. Add desired amount of chia seeds (I used a little less than 1/4 cup) and blend a little more so they are mixed in well. Put in a container and chill in the fridge for about an hour.
